I think the best course of action would be to give a task to a non-technical user and watch them trying to complete it. Eg “Make a change and merge it with a pull request”. Then you can see, where the user gets stuck and what you have to bridge to make it easier for them

Yes. If you have automatic updates enabled, it will install the newest version with trackers and ads. You could disable the automatic update for these apps and hope they stay relevant to your os for a little while.
