I haven’t made this in a while so don’t have a picture of it handy, but it’s one of my favorite recipes for sweet bread. I’d make it almost weekly if the family liked coconut. As it stands it wouldn’t be healthy for me as the only one that eats it…
Coconut Bread
Ingredients: Coconut Bread:
4 Eggs 1 Cup Vegetable Oil 2 Cups Sugar 1 Cup Buttermilk 1 teas. Coconut Extract 3 Cups Flour 1/2 teas. Baking Soda 1/2 teas. Baking Powder 1/2 teas. Salt 1 Cup Coconut
Syrup:
1 Cup Sugar 2 Tablespoons Butter 1/2 Cup Water
Directions: Preheat oven to 325°F. Grease 2 bread pans with butter. Mix all the dry ingredients except for the coconut together and whisk. Mix all the wet ingredients together. Add the dry to the wet and mix until it just starts to come together. Add coconut. Bake at 325°F for 1 hour. About 10 minutes before the bread is done start mixing together the syrup. Add all the ingredients to a small sauce pan and stir constantly till boiling. Turn down heat, but keep it at a boil. Boil for 5 minutes. After removing the bread from the oven take a knife and run it along the edges of the bread. Pour syrup over the top of each loaf when you remove from oven and allow to cool in pans (or don’t, your choice).
